Cross Cupcakes

Cross cupcakes for Aiden's Baptism. I realized I really need to find a foolproof butter cream recipe cause in making these cupcakes I tried 3 different butter cream recipes and i still didn't get the consistency I wanted. The first was with salted butter and I didn't care for the taste, so I made another one with margarine but it was to runny, the last one I tried was with Crisco but it wasn't smooth enough. Anyone have and butter cream recipes to share?

I made the chocolate crosses a few days before with vanilla melting candy wafers in light and dark blue I pipped the design in to small cross molds and let them sit in the fridge for a minute. After that then I used melting chocolates, milk chocolate and white chocolate. I melted the chocolate and poured it into the same small cross molds and let them sit in the fridge for 5 minutes. Then ta da! They are chocolate cake, with white butter cream icing, baked in foil baking cups.

Moose Cupcakes!

These guys came out so cute!! They took a lot of work, time, and prep but it was worth it! I made Moose's because my son Aiden is my little moose. They are made with chocolate cake, chocolate frosting, tootsie rolls for the ears and mouth, m&ms for eyes, light cocoa melting wafers which is how I created the antler and Twinkies for they re snouts.

Rubber Ducky CupCakes

Once again the heat and humidity worked against me in the kitchen. The paper liners on the cupcakes were peeling off again!!! ehh, lol and the donut holes used for the duck heads were way to big and the ducks were tipping over! lol But it was fun and the kids loved them. Oh well next time they will be perfect! This idea was from the book 'whats new cupcake?' They were made with Lemon Cake, butter cream icing, m&ms, orange tootsie rolls, large marshmallows, and donut holes.

Practice Cupcake Bouquet


A few weeks ago I tried for the first time to make a cupcake bouquet and to be honest I'm not to thrilled with the end result but practice makes perfect. So many things went wrong with this one... ehh... lets see. The cup cakes were falling out of they re paper liners because of the heat in the house. My rose tip was to large and was putting to much frosting on the cupcakes so they were to heavy to place all around the ball, I ended up using a smaller tip but not a rose tip. If you look at the picture on the top you can see a few cup cakes that were done with the rose tip and they look beautiful but then you can see the other cupcakes that were used with the other tip and they all just look like a swirly mess! Even the colors are all wrong! They look alright, but no where as good as I would like them to look. But I will have to try again and find a smaller rose tip. This was made with Mini Lemon cupcakes and white butter cream icing.
